class=\"bumpedFont15\">? <\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">Because we are going to talk about sensory analysis of food<\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">.<\/span><\/span><\/p>\n<p class=\"s10\"><span class=\"s9\"><span class=\"bumpedFont15\">There are many methods for sensory analysis of food and beverages<\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">, <\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">and they are all based on feelings<\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">.<\/span><\/span><\/p>\n<p class=\"s10\"><span class=\"s9\"><span class=\"bumpedFont15\">Taste is a complex of sensations<\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">, <\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">perceived when eating a food product<\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">. <\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">There are different receptors on the taste buds of the tongue and soft palate<\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">. <\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">And depending on the type of papilla, the receptors perceive touch<\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">, <\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">pain<\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">, <\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">temperature or convert chemical signals<\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">, <\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">obtained from contact with a substance<\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">, <\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">into nerve impulses<\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">, <\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">that are processed by the brain and give a person an idea of the taste of a substance<\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">.<\/span><\/span><\/p>\n<p class=\"s10\"><span class=\"s9\"><span class=\"bumpedFont15\"><img fetchpriority=\"high\" class=\"s9\"><span class=\"bumpedFont15\">, <\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">bitter and umami<\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">. <\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">If we have been familiar with the first four for a long time<\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">, <\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">umami is relatively new<\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">. <\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">This term is translated from Japanese as \"pleasant taste\"<\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">, <\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">and you can feel it in tomatoes<\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">, <\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">walnuts<\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">, <\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">Parmesan and Roquefort cheeses<\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">, <\/span><\/span><span class=\"s9\"><span class=\"bumpedFont15\">as well as in Japanese cuisine<\/span><\/span><span
